TERROIR

 - THE VINE -

The vineyard covers 12 hectares in a single block on the edge of the garrigue, facing northwest, with a diverse range of grape varieties typical of the Mediterranean terroir.

Vines are trained in goblet or trellis systems.

Red grape varieties : Grenache, Syrah, Mourvèdre, Carignan, Cinsault

White grape varieties : Grenache Gris, Vermentino

The vineyard is cultivated with respect for the vine and the authenticity of the terroir, without the use of pesticides or herbicides, according to organic farming practices.

CLAY-LIMESTONE, PEBBLES

Fifty-year-old vines planted on deep, well-drained soil of sedimentary origin, mixing clays, limestones, sandstones, calcareous marls and pebbles.

NORTH-WEST EXPOSURE

Facing the foothills of the Larzac plateau: the climatic influence of this terrain tempers the excesses of the Mediterranean climate, providing the freshness found in the wines. A significant temperature difference between day and night, white limestone that reflects solar radiation, and the north wind as a true ally.

BIODIVERSITY

The scrubland, trees, and dry stone walls provide habitat for a rich array of beneficial wildlife. These visible and invisible companions, valuable partners of our vines, contribute to the balance of this ecosystem and the vitality of the soil. This support is further enhanced by the winter presence of sheep in our vineyards.

 - IN THE CELLAR -

The winery naturally extends the work carried out in the vineyards. Winemaking is done plot by plot: particular attention is paid to managing ripeness, in order to harvest each grape variety at the optimal time.

The harvest is done by hand, with or without destemming, and the grapes are received by gravity.

Each stage of winemaking aims to reveal the truest expression of the terroir.

Every action is guided by the desire to craft authentic, elegant wines that reflect their terroir.

Old vines naturally offer beautiful concentration, guaranteeing depth and balance in the wines.

Extraction is gentle, and temperature control is rigorously monitored.

The wines are aged in vats, barrels, or demi-muids of French oak. The building, nestled in the undergrowth, ensures stable temperatures for aging the wines.

Bottling takes place at the estate during the waning moon.

 - THE OLIVE TREES -

Like our vines, our olive trees are cultivated organically.

But unlike the grapes, which are vinified separately for each plot,

the different olive varieties are harvested together in October. The blend is chosen at planting time.

A whole new world, with varieties adapted to the terroir: Verdale, Picholine, Lucques, Olivière, Aglandau, Arbequina, Glory, Picodo, and, most recently planted in 2024, Rougette de Pignan.

In a few years, we hope to produce a few bottles of our olive oil, primarily for our own enjoyment.

 - THE LANDSCAPE -

Scrubland, trees and dry stone walls, vineyards and olive groves make up our landscapes

and provide habitat for a rich array of beneficial wildlife.

These valuable partners of our vineyards contribute to the balance of this ecosystem and the vitality of the soil.
